At Bistro 36 Drinkery & Eatery, our story is rooted in hospitality, tradition, and a shared love for French-inspired cuisine. Behind every dish and every detail, you’ll find the vision and dedication of our owners and chef.
Michael Cote — Owner
Growing up in a French household, I was raised by my grandmother, Danielle Cote, who taught me the beauty and simplicity of French cooking. Those early memories—in her kitchen, learning the fundamentals passed down through generations—shaped not only how I cook, but how I see hospitality as a whole.

After spending more than 15 years in various areas of the hospitality and restaurant industry, I was finally able to bring my vision to life: a restaurant created in her honor, built on the traditions and lessons she shared with me. Simple, authentic French food, paired with exceptional wines, handcrafted cocktails, and genuine hospitality.

To bring this dream to its fullest potential, I partnered with two industry veterans: Jake Weber, who brings over 15 years of fine-dining and private-event expertise, and Rafael Muñoz, who has spent more than 22 years in professional kitchens—14 of those specializing in French cuisine. Together, we share a commitment to offering generous portions, warm service, and approachable pricing, all while staying true to the fundamentals I learned in my grandmother’s kitchen.

Jake Weber — Owner
My passion for hospitality has grown over more than 15 years in the restaurant industry, with experience ranging from casual dining to fine dining and everything in between. At the heart of it all is my love for caring for people—food has always been my love language. I believe that connecting through food is one of the most intrinsically human experiences we share, and I take great pride in creating spaces where those connections can flourish.

At Bistro 36, I weave my background as a teacher into our culture, ensuring our team is knowledgeable, confident, and genuinely passionate about our food and bar program. Together, we strive to deliver exceptional experiences for the Littleton community and beyond—whether it’s a quick stop for a beer, a relaxed happy hour with friends, or a long, indulgent, romantic evening.

Having spent several years as a private events coordinator, I’m thrilled to bring that expertise to the wedding dinners, holiday parties, and special events hosted at Bistro 36.
​Rafael Muñoz — Owner
Chef Rafael brings more than 22 years of experience in French-inspired kitchens, blending his diverse culinary background into every plate. His artistry and dedication to technique help define the soul of Bistro 36, bringing to life the flavors and traditions from Mike's childhood that make dining with us unique.
